It is a tuber of a grass plant that grows in a moist substrate, similar to rice. Its stems can grow up to 1.5 meters in height. Water chestnuts owe their name to their similarity to ordinary chestnuts. A brown crust surrounds a crispy, white, slightly sweet inside which, unlike other vegetables, remains crispy even when cooked. Water chestnuts are a valuable source of fiber, vitamins B2 and B6, potassium and magnesium. They taste best fresh, however, such are quite difficult to obtain. So the most commonly used canned water chestnuts, which can be used up to a month after opening.
